Quetzal Decaf is a washed, decaffeinated coffee from Chiapas, Mexico. It is grown by smallholder farmers at altitudes between 1,200 and 1,800 meters, near the El Triunfo Biosphere Reserve. The region’s rich soils and diverse microclimates give this coffee balance and depth.
In the cup, you’ll find gentle brown sugar sweetness, notes of dark chocolate and nuts, bright orange-like citrus, and a subtle touch of warm spice. It’s a smooth, approachable decaf with real character and without compromise.

Quetzal Washed Decaf is processed using the Mountain Water Process, a gentle and chemical-free decaffeination method. It removes caffeine while preserving the coffee’s natural flavor and aroma.
The process was developed by Mexican experts at Descamex. It uses pure spring water from Pico de Orizaba, Mexico’s highest volcano.
First, the green coffee beans are steamed to open their pores. This allows the caffeine and soluble compounds to be released. The beans are then immersed in purified water from Pico de Orizaba, which extracts the caffeine.
The water passes through special filters that remove the caffeine while keeping the flavor compounds intact. Up to 99% of the caffeine is removed. Afterward, the aromatic components are reintroduced to the beans. They are then dried, packed, and prepared for export.
Because only water and filtration are used, the Mountain Water Process protects the coffee’s origin character and preserves its natural complexity.


Preparation of 30g Quetzal Decaf beans, ground to a grind size between 11.2 and 16 on the Timemore C5 with 450 ml of water at a temperature of 94°C.
Avoid bitterness by setting your grind size to a coarser setting.
