In Chiapas, Ensambles partners with dozens of smallholder coffee producers spread across the Sierra Madre region, including communities near the El Triunfo Biosphere Reserve. These farmers tend modest plots, often less than one hectare each, cultivating coffee alongside diverse crops in traditional polyculture systems that support both livelihoods and local ecosystems. Ensambles facilitates market access by paying above local prices, offering technical training, and providing mobile cupping labs for quality feedback, helping families participate meaningfully in the specialty coffee market with full traceability. Through ongoing field support and equitable practices, producers gain fairer income and stronger negotiation power compared to traditional intermediated markets.
