Cascaritas Barolo is a bold yet gentle Arabica coffee of the Parainema variety, grown on Finca Cascaritas in Honduras by Hidardo Hernández and his family. Processed as a Natural, it was fermented with Barolo yeast to achieve a controlled, precise flavor profile. The result is a complex aroma with deep sweetness reminiscent of cherry and grape, carried by an exceptionally smooth mouthfeel. Lightly roasted, it shows its best potential as a Pour Over, Filter, in the Aeropress, or as a modern espresso.

About Cascaritas Barolo
The coffee is grown at 1,300 m elevation by Hidardo Hernández on Finca Cascaritas. For this microlot, Hidardo uses the Parainema variety.
Hidardo has a strong interest in experimental cultivation and processing methods, particularly the use of specialized yeast cultures to precisely control the coffee's fermentation process. For this coffee, he uses Barolo yeast, traditionally used in the production of Barolo wine from Piedmont. The coffee is inoculated with Barolo yeast and then processed as a Natural, dried whole in the sun on African raised beds.
The result is deep sweetness, aromas of cherry and grape, and a silky mouthfeel reminiscent of tea.
Hidardo relies exclusively on organic and sustainable farming methods for his coffee production.
Brewing recommendation for Cascaritas Barolo


Chris recommends the following recipe for brewing Cascaritas Barolo with the Hario V60
Boil 300g water. Weigh 16g coffee beans, grind to coarse to medium coarseness. Add coffee grounds to filter, and lightly shake to level. Pour 30g water at 94°C evenly over the grounds. Let bloom (de-gas) for 30 seconds. Pour the remaining water in 2-3 rounds spread over 45 seconds. Enjoy.

Finca Cascaritas
Ocotepeque, Honduras 1300 m a.s.l. Altitude
Finca Cascaritas is the coffee farm run by Delmy Hernández and her son Hidardo Hernandéz. The farm is in Ocotepeque in the mountains of Southern Honduras close to the border to El Salvador. From 1,230 to 1,300 meters altitude, Hidardo and Delmy cultivate different varieties like Parainema, Obata and Bourbon and process them into different micro lots. The farm is Rainforest Alliance certified and produces sustainably and ecologically coffees grown under the shade of hazel pine, guamo, malcinca, and American walnut trees.
