Cascaritas Washed is an Arabica coffee of the Parainema variety. The coffee was grown on the Cascaritas farm in Honduras by Hidardo Hernández and his family. It was processed using the washed method, resulting in great clarity and pleasant citrus notes such as tangerine and orange, along with a light sweetness reminiscent of sugarcane. The coffee has a medium roast level. We recommend brewing it as a filter, in a French Press, or using an espresso maker.

Hidardo Hernández, CAFESMO
Hidardo Hernández is the founder of the CAFESMO Ocotepeque cooperative and a fourth-generation coffee farmer. Coffee has been part of his life since childhood. Together with his mother Delmy Hernández, he runs Finca Cascaritas, where he grows different coffee varieties as carefully crafted microlots.

About Cascaritas Classic

Cascaritas Classic is a versatile medium roasted coffee that, due to its clarity, can be brewed into a delicious cup in a filter, a French Press, or espresso maker.
The coffee is grown at an altitude of 1300 meters by Hidardo Hernández on the Cascaritas farm. For Cascaritas Classic, Hidardo used the Parainema variety, which is cultivated in the shade of pine and walnut trees. The altitudes of the mountains around Ocotepeque are ideal for growing Parainema coffee cherries.
The ripe coffee cherries are picked, separated from their pulp, and then processed. During processing, the coffee is dried and then fermented in a tank to remove the mucilage around the seed. Finally, the coffee is washed with fresh water and then dried.
Hidardo only uses ecological and sustainable farming methods for coffee production.
Brewing recommendation for Cascaritas Classic


Chris recommends the following recipe for brewing Cascaritas Classic with the Moccamaster
Medium fine ground coffee (14 clicks on the Timemore C3S or 500 μm). We use 64 g of coffee grounds for 1 l of water on the Moccamaster.
Also tasty as a pour over with the Hario V60. Water temperature 93°C, 400 ml water on 24 g of coffee grounds.

Finca Cascaritas
Ocotepeque, Honduras 1300 m a.s.l. Altitude
Finca Cascaritas is the coffee farm run by Delmy Hernández and her son Hidardo Hernandéz. The farm is in Ocotepeque in the mountains of Southern Honduras close to the border to El Salvador. From 1,230 to 1,300 meters altitude, Hidardo and Delmy cultivate different varieties like Parainema, Obata and Bourbon and process them into different micro lots. The farm is Rainforest Alliance certified and produces sustainably and ecologically coffees grown under the shade of hazel pine, guamo, malcinca, and American walnut trees.

Der Kaffee ist definitiv mittel geröstet - man schmeckt die Röstung, aber dennoch gibt es noch ein Aroma des Kaffees selbst, ohne dass er sauer ist. Super!
