Cascaritas Chardonnay is an Arabica coffee of the Pacas variety. The coffee was grown on Finca Cascaritas in Honduras by Hidardo Hernández and his family. It was fermented using Chardonnay yeast and honey enzymes to create a controlled flavor profile. This results in a complex aroma with a deep, tangy sweetness reminiscent of blackberries and grapefruit. The coffee has a light roast level.
We recommend brewing it as a modern espresso (e.g., turbo shot), filter coffee, in the AeroPress, or as a pour-over.

About Cascaritas Chardonnay

Cascaritas Classic is an experimentally processed coffee with a light roast level, offering a complex flavor profile and deep sweetness — making it an exciting choice for a modern espresso or pour-over.
The coffee is grown at an altitude of 1,300 meters by Hidardo Hernández on Finca Cascaritas. For this microlot, Hidardo uses the Pacas variety.
Hidardo has a strong interest in experimental cultivation methods, particularly in the use of special yeast cultures to precisely control the fermentation process of washed coffee.
For this coffee, Hidardo uses Chardonnay yeast, typically used in fermenting Chardonnay grapes. He also adds honey enzymes to further refine and control the fermentation process.
Hidardo relies solely on ecological and sustainable farming practices for coffee production.
Brewing recommendation for Cascaritas Chardonnay


Chris recommends the following recipe for brewing Cascaritas Chardonnay with the espresso machine
Try a coarse ground to achieve more acidity and sweetness and avoid herbal bitterness. We do 18 g with 21 seconds of shot time and an output of 32 g.
As a pour-over: Brew 18 g with 300 ml of water using a coarse grind. With a relatively fast flow rate and a high temperature (around 97 °C), you’ll get tea-like aromas and the deep sweetness of ripe blackberries.

Ocotepeque, Honduras 1300 m a.s.l. Altitude
Finca Cascaritas is the coffee farm run by Delmy Hernández and her son Hidardo Hernandéz. The farm is in Ocotepeque in the mountains of Southern Honduras close to the border to El Salvador. From 1,230 to 1,300 meters altitude, Hidardo and Delmy cultivate different varieties like Parainema, Obata and Bourbon and process them into different micro lots. The farm is Rainforest Alliance certified and produces sustainably and ecologically coffees grown under the shade of hazel pine, guamo, malcinca, and American walnut trees.
