Bella Vista is a honey-processed Pink Bourbon grown by José del Mar Ordoñez at his farm in San Agustín, Huila, Colombia. As part of the monKaaba producer group, José del Mar is the only farmer in the collective to use this method. Roasted light, it opens with dried apricot and delicate florals before settling into a smooth toffee sweetness. Best enjoyed as a pour over, filter, or AeroPress.

About Bella Vista

Among producers in San Agustín, Huila, José del Mar Ordoñez is well-known for the quality of his traditional washed Pink Bourbon lots. But it was this lot of Honey-processed Pink Bourbon that caught the attention of the monKaaba group, a smallholder producer initiative that we’ve been engaged with since early 2024.

Honey processing is intensive and requires time and attention to achieve good results. For this honey lot, the coffee cherries were harvested every 3 weeks. After pulping, they are fermented in a tank for 3 days. After fermentation, the husk was removed and the coffee was dried with its pectin layer. Fermentation during drying gives coffee a very round sweetness. However, the process is difficult to control, especially at the altitude of José del Mar's finca, which is almost 2,000 meters above sea level.

Brewing recommendation for Bella Vista

Chris recommends the following recipe for brewing Bella Vista with the Hario V60

Weigh out 24g coffee beans and grind with a setting of 17 clicks on the Timemore C3S Pro (equivalent to ~ 630 μm). Add 400 ml water at a temperature of 93°C. The result is a cup with a crisp, juicy acidity and floral elegance. Avoid astringency by adjusting the grind size coarser.

José del Mar Ordoñez’s Finca Bella Vista is located in La Esperanza, San Agustín, Huila, Colombia. Located between 1,940 and 1,960 masl, it is the last coffee farm in this area before the altitude climbs above 2,000 and farms give way to high mountains. Three out of the farm’s total 4.2 hectares are planted with coffee trees, including 3,000 Caturra plants, 2,500 each of Catimor and Pink Bourbon, and 500 Bourbon Ají.
