    Warawul Coffee Roasting Schedule

    We received a lot of questions from you regarding Warawul's coffee roasting schedule. Warawul's second roast day is thus a welcome opportunity for us to share how we currently plan our roasting so that the coffee gets to you as fresh as possible.

    Two weeks after our first production roast, the Warawul team returned to Communal Coffee to roast another batch of coffee. Our first batch, co-branded with Gitesi Coffee, sold fast and we needed to refill our stock. Mars, head roaster of Vote Coffee and Communal Coffee, who is currently roasting the coffees for us, had prepared a new batch. We had decided to slightly tweak the roast profile based on feedback we received from those of you who have already tried our coffee.

    In the future, we are planning to roast coffee every two weeks. Warawul's roast day is currently Friday. We pack the coffee into the bags immediately after roasting. To us this is the best way to ensure that the coffee stays as fresh as possible.

    We live in the same neighborhood as Communal Coffee. This allows the Warawul team to have short and uncomplicated transportation of the coffee between the roastery and our shipping point. We want you to receive freshly roasted coffee. There is nothing better than opening a pack and smelling that heavenly aroma from the toasted beans.

    But – there is always a but – if you just received a very recently roasted coffee from us, you might wonder why the taste keeps improving even after you have already opened it and brewed some tasty cups.

    During the roasting process, the coffee undergoes dramatic changes in its inner structure and releases CO2 afterwards. This degassing process allows the CO2 to leave the beans and frees aroma volatiles in the process. They can then better unfold their flavor during the brewing process.

    Therefore, we recommend that you allow the coffee to rest for 5 to 10 days after its roast date to allow it to de-gas before judging the coffee’s flavor profile. Darker roasts like our Gitesi Espresso usually de-gas faster than lighter roasts like our Gitesi Peaberry. All Warawul coffee bags feature a one-way valve that allow CO2 to escape while keeping oxygen out and preventing beans from getting stale.
