This bright, juicy Pink Bourbon from Diever Galindez’s Finca Las Juntas is our first single producer lot from Monkaaba, a producer-led empowerment initiative that supports growers as they enter the specialty coffee market. Las Juntas is nestled among steep slopes at 1800 meters in Alto Las Chinas, Huila, Colombia. Coffee cherries were harvested over 3 days, fermented and then washed and dried. We chose a light roast to showcase the coffee’s stunning natural flavors. The resulting cup is sweet with bright acidity. We recommend preparing it in any manual brewer or a drip coffee maker.

Diever GalindezmonKaaba

Diever Galindez and his wife Estela Guzman run Finca Las Juntas, located at an average of 1,800 masl in the gorgeous mountains of San Agustín, Huila, Colombia. They grow exceptional Pink Bourbon coffee and other varieties on 3 hectares of land.

Like many smallholder producers in Colombia, Don Diever sold his coffee for many years on the conventional market, where prices are low, traceability is minimal, and feedback on quality is null. Joining Monkaaba gave Diever the knowledge and market access he needed to be able to sell his first microlots under his own name on the specialty market.

About Las Juntas

Las Juntas is a Pink Bourbon that is roasted light to preserve its fruity flavors and floral aromas. It is excellent as a filter coffee or in any manual brewer such as V60 or AeroPress.

The coffee was grown by Diever Galindez on Finca Las Juntas at 1800 m a.s.l. The farm is located in Alto Las Chinas, which is part of the famed coffee growing region of Huila, Colombia.

A 2023 genetic study of Pink Bourbon shows that it is an Ethiopian landrace and not a cross of Red and Yellow Bourbon variety as originally thought. Pink Bourbon has spread throughout the Huila region and beyond due to its resistance to disease, its relatively high yield, and its excellent flavor quality.

Anabel recommends the following recipe for brewing Las Juntas with Hario V60

Preparation of 24g Las Juntas beans, ground with a setting of 14 clicks on the Timemore C3S Pro (equivalent to ~ 500 μm) with 400 ml water at a temperature of 95°C.

Results in an intense fruity note with a deep sweetness and notes of blood orange, mango, and passion fruit. Avoid astringency by adjusting the grind size coarser.

Finca Las Juntas comprises 3.75 hectares and is planted with more than 9,000 coffee trees in a stunning valley in Huila. Like many smallholder producers in Colombia, Diever has his own micro wet mill where he processes coffee cherries. This includes pulping, fermenting, washing, and drying the coffee into green parchment before it is delivered to a dry mill and prepared for exportation.
